Ingredients
Idli Batter - as required
For Orange Color
Tomato - 1 big
Red Chilies - 2
For Green Color
Cilantro/Mint - 1 cup
Green Chilly - 1
Cumin Seeds - 1/4 tsp
Method
Tricolor Idli/Dosa Batter
Take the required portion of the idli batter and divide it into three equal parts. Keep one part as such for the white color of the tiranga idli/dosa.
For Orange Colour
Chop the tomatoes into chunks.
Saute the tomatoes and red chilies for just a couple of minutes for the raw taste to go.
Cool it and grind it to a smooth paste.
Mix it with one portion of the batter to make the orange color of the tiranga idli/dosa.
For Green Colour
Chop the cilantro (or mint leaves) roughly.
Saute it with the green chilies for just a couple of minutes to remove the raw flavor.
Cool it and grind it to a smooth paste.
Mix it with the third portion of the batter to make the green color of the tiranga idli/dosa.
To make the tricolour Idlis
You can make separate idlies with the three batters and arrange it in tri color as shown in the picture below.
To make the tricolour Dosa
Heat a dosa griddle. Add few drops of oil and wipe it with a kitchen towel or paper towel.
Pour 1/4 of a ladle of the orange batter and spread it into a semi circle.
Next add 1/4 of a ladle of the white batter and spread it to make the middle portion of the dosa.
Finally pour the green batter and make the lower semi circle.
Drizzle few drops of oil over the dosa.
After few minutes when one side of the dosa is cooked, flip the dosa.
Cook the other side too.
Make your yummy tricolor dosas.
