Chicken Biryani
Biryani is a dish made with rice, lots of spices and some meat/vegetables. It is a favourite and famous dish among Indians and even other parts of the world. The recipe given below is that of chicken biryani. Using the same recipe but changing the ingredients instead of chicken , you can make different biryanis like turkey (van kozhi) biryani, mutton biryani, quail (kada) biryani, duck biryani, beef biryani, pork biryani, mushroom biryani, soya biryani, fish biryani, prawns biryani, corn biryani , chikpea biryani or vegetable biryani ( with mixed vegetables).
Egg Biryani
Egg Biryani is the simplest of biryani varieties that you can make with just a few ingredients. My whole family loves eggs and I often love to make egg pulav, egg dosai, egg fried rice or other egg dishes.
Though many people make egg biryani in their own style, this is my favorite way of making. I add fried hard boiled eggs as well as scrambles eggs so that every bite of biryani has the egg flavor. You can make it using the one pot method in a pressure cooker or follow the traditional dum process to make it. I have shared both methods below.
Chana Biryani
Chickpeas (Garbanzo Beans) is a favorite in our family. We try to include white, black and green channa in our diet very frequently. The great thing about chickpeas is that it tastes so great in a wide range dishes including salads, curries, chaats etc. There are many famous recipes made with chickpeas like channa masala and the Kerala kadala curry which I have already shared. Chickpeas is also used in other countries commonly. Chickpea flour, known as besan (or gram flour) is used to make many gluten free dishes and fried snacks. Don't forget to check out all all my chickpea recipes here. I guess I've shared enough about the uses of chickpeas, lets get to the recipe for the day.
