Pooran Poli or Puran Puri is a popular dish from Maharashtra. A variation of this poli is made in the states of Tamil Nadu and Kerala. See the Tamil Nadu and Kerala variation here.
Pooran Poli can be eaten as a quick snack with some pickle, or served with rice and/or a salad for a filling and delicious main meal. They have no milk and egg-free, low in fat and high in protein. On top of all that they’re easy to make. The filling is made with chana dal and jaggery. It is a very lovely item to eat any time of the day.
Ingredients
For Filling
Chana dal - ¼ cup
Jaggery - ¼ cup
Cardamom powder - ¼ tsp
Ginger powder - less than ¼ tsp
Sugar - 1 tsp
Ghee - 1 tsp
For Covering
Wheat flour - ½ cup
Salt – ¼ tsp
Turmeric – a pinch
Water
Oil – 3-4 tsp
Method
For The Stuffing
Wash and soak the chana dal for 4-5 hrs.
Boil it with enough water. When you boil, the scum will float on top, remove the same.
Cook till the dal is soft. To check, just take one dana (dal) in your hand and press it between your thumb and forefinger. If it is broken smoothly, it is cooked. Do not overcook the same.
Drain the excess water and run cold water through it.
Put the cooked dal in a mixer/blender and make a powder of it.
In a heavy bottom pan, add the jaggery and little water. Melt the same and boil it till you get one thread consistency.
Mix the powdered chana dal, cardamom powder, ginger powder and stir well till it leaves the pan.
At this stage, add the ghee and switch off the gas. Allow it to cool.
For The Covering
In a kadai, add wheat flour, salt and turmeric. Mix well.
Add water little by little and knead to form a pliable dough. Add oil and mix well again. The dough should be little loose than the one you make for chapatti.
Pour little oil on a plate and keep the dough on top of the oil. Cover and leave it aside for an hour.
To Make The Puran Poli
After an hour, take out the dough and knead again.
Divide equally; you will get 4-5 balls out of it.
Make puran balls with the prepared stuffing also and keep it ready.
Take one dough ball and make it in the shape of a small cup.
Put the puran (stuffing) ball and cover to wrap the stuffing with the dough.
Flatten the same in your palm. Place it on a chapatti stand (Pol pat) and roll it with rolling pin to about a 6” circle.
Heat a tava and place the rolled out puran poli carefully on it.
Cook by applying oil till you get brown spots on both the sides. The pooran poli is ready to be served.
